A single bunch of large turnips will serve about 3-4 people. If you're ordering smaller turnips early in the season, you'll want to buy double.

  • Turnips
  • Grass-fed cow's or goat's milk
  • Grass-fed butter

Additional Ingredients

  • Sea salt or pink salt to taste
  • Ground black pepper

Directions

  1. Wash, then halve the turnips. (Optional: Peel the turnips before halving them.)
  2. Boil the halved turnips in a pot of water for about 30-40 minutes until soft when forked.
  3. Drain the turnips and add about 1-2 tablespoons of butter and 1/3 cup of milk.
  4. Mash by hand with a potato masher, fork, or an electric mixer, adding more milk as you go until the desired texture is reached.
