Turnips bring much needed variety into the winter diet here in Southern Idaho. Roast turnips are easy and convenient, but for an equally satisfying option, try mashed turnips.

A single bunch of large turnips will serve about 3-4 people. If you're ordering smaller turnips early in the season, you'll want to buy double.
- Turnips
- Grass-fed cow's or goat's milk
- Grass-fed butter
Additional Ingredients
- Sea salt or pink salt to taste
- Ground black pepper
Directions
- Wash, then halve the turnips. (Optional: Peel the turnips before halving them.)
- Boil the halved turnips in a pot of water for about 30-40 minutes until soft when forked.
- Drain the turnips and add about 1-2 tablespoons of butter and 1/3 cup of milk.
- Mash by hand with a potato masher, fork, or an electric mixer, adding more milk as you go until the desired texture is reached.
- Season with salt and pepper and serve.
