Kohlrabi

The crunchy, bulbous stem of kohlrabi is excellent peeled and used raw in salads, slaws, and crudités. The flavor is like a sweet broccoli stem and the texture is similar to a jicama. You can also enjoy kohlrabi roasted, baked into kohlrabi "fries," or cooked in a variety of German and Eastern European recipes.
